So we've been eating Paleo for almost 2 months now. It has been quite successful. I do have to say that sometimes it is very hard to find new and exciting recipes and sometimes I really don't wanna eat what I made for dinner. I get sick of eating just meat, veggies, fruits, and nuts. Over all though, things have been going well.
It is getting easier to come up with meals. I have tried making desserts and bread with coconut flour, almond flour, etc. but I haven't found a recipe yet that I actually like. Im sure I will eventually.
So for results.......Like I said, we have been doing this for ALMOST 2 months (June 7th will be 2 months). I have lost 42 pounds!!!! No I am not starving myself, yes I am eating PLENTY of food. This low carb diet has just really started shedding the pounds off of me. I am over half way to my goal. I am so glad that I am finally losing weight.
So this was just a quick update. Hopefully I can add more to this soon....
